STUFFED FIGS IN A BLANKET

Prep Time: 45 minutes
Yield: 12

Comment: Makes an excellent appetizer for any gathering.

Ingredients:
¼ cup dried cranberries
6 ounces fresh goat cheese, at room temperature
12 dried apricots
12 raisins
12 dried figs
6 slices prosciutto

Method: Heat oven to 350 degrees F. Chop the cranberries and mix them into the goat cheese. Cut the tops off of the apricots and using your fingers open the apricot and fill with some of the cheese mixture and push a raisin into the center. Fill the fig with some cheese and then push the stuffed apricot into the center of the fig. Repeat process using all of the fruit and ending up with 12 stuffed figs. Slice the prosciutto slices in half lengthwise and wrap a slice around each fig. Place on a baking sheet and bake until the prosciutto has browned, about 20-25 minutes.
